The solution made in the first step of recrystallization of benzoic acid is a saturated solution. A saturated solution is one in which no more solute can be dissolved at a given temperature. In the case of benzoic acid, the solvent is typically water, and the solubility of benzoic acid in water is limited. Once the solution is saturated, any additional benzoic acid that is added will not dissolve but will instead precipitate out of solution.
